Spread flour on cookie sheet and bake at 400° until brown, about 15 minutes.

Brown sausage in stockpot.

- 2 cloves garlic
- 1 onion, chopped
- 1 celery stalk, chopped
- 1 bell pepper, chopped
- 10-12 oz cut okra

Add vegetables to pot and cook until soft.

Add browned flour and stir, then add tomatoes.
Cook and stir about 15 minutes until dark brown, smooth and thick.

- 5 cup chicken stock
- ½ teaspoon red pepper
- 1 teaspoon salt
- ½ teaspoon thyme

Add stock and seasonings.
Simmer uncovered 1 - 3 hours.

- 2 pounds shrimp
- 2 pounds chicken
|
Cut shrimp and chicken into chunks.
Add shrimp and chicken and cook until done.
