Basic Pork Belly

4 pounds fatty pork belly, without skin
garlic salt


  • Preheat oven to 450°
  • Score the fatty side of the slab of pork belly, cutting through most of the layer of fat; this helps the fat render better and become crispier
  • Slice the meat in about 1.5-2.0 inch strips and arrange in a roasting pan, fatty side up, with a little space between each strip
  • Sprinkle salt, pepper, and garlic salt on all sides of each strip, not to heavily
  • Bake at 450° for 30 minutes, then lower heat to 275° and bake about 60-90 minutes, until fat is crispy and browned
