Carrot Cake - Kathi

Cake Batter Ingredients
- 1/2 cup oil
- 2 cups sugar
- 4 eggs
Mix well.
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla
Mix well.
- 13 ounce can crushed pineapple (save out 1/3 cup)
- 3 cups grated carrots
- 1 cup chopped walnuts (optional)
Mix well.
- Put into greased and floured 9 x 13 pan.
- Bake at 375 degrees for 25-30 minutes.
- Cool well.

Cream Cheese Frosting
- 8 ounces cream cheese
- 1 lb box powdered sugar
- 1 stick butter
- reserved crushed pineapple (1/3 cup)
- 1/3 cup finely chopped walnuts (optional)
