Carrot Cake - Kathi

This recipe comes from Kathi McKillip. Butch and Kevin like it.

Cake Batter Ingredients

  • 1/2 cup oil
  • 2 cups sugar
  • 4 eggs
Mix well.
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
Mix well.
  • 13 ounce can crushed pineapple (save out 1/3 cup)
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)
Mix well.
  • Put into greased and floured 9 x 13 pan.
  • Bake at 375 degrees for 25-30 minutes.
  • Cool well.

Cream Cheese Frosting

  • 8 ounces cream cheese
  • 1 lb box powdered sugar
  • 1 stick butter
  • reserved crushed pineapple (1/3 cup)
  • 1/3 cup finely chopped walnuts (optional)
