Chicken Tacos

Ingredients
  • 1 1/2 pounds boneless/skinless chicken thighs (I used a single of Costco's three pack)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
Taco Toppings

Instructions
  • Pat chicken dry and season with spice rub.
  • Bake at 350° to internal temperature of 170°.
  • Slice and cube after cooling a few minutes.
  • Ready for tacos!
  • Tested on the family. Tasty!
