Gasparilla Chuck Steak

1 thick skinned lemon
1 clove garlic split
1 thick skinned orange
1 chuck steak(1 1/2" thick)
3/4 c. mixture olive & salad oil


  1. Cut fruit in thick slices.
  2. Heat in oil with garlic till rind is brown, 5-8 minutes, pressing fruit as it heats.
  3. Pierce steak all over with fork.
  4. Cover steak with hot oil mixture. Marinate 4-5 hours.
  5. Grill over charcoal or pan broil in very hot, heavy skillet until crispy brown outside and juicy pink within, about 8-12 minutes.
  6. Season with salt and pepper.
