7 ounces full fat cottage cheese
1 tablespoon chia seeds
4 tablespoons (1/4c) ghee or butter or coconut oil
Blend all ingredients (I use hand blender) and let sit for at least 5 minutes to thicken.
Heat griddle and oil with ghee, butter, or coconut oil.
Cook pancakes on low/medium heat for about 3-4 minutes on each side.
