Cream butter and sugar until fluffy. Add egg and mix.
Mix buttermilk with baking soda. Alternately add flour, salt, baking powder, vanilla and buttermilk mixture, mixing between ingredients.
Chill dough several hours or overnight.
Take a small amount of dough the size of a walnut or a little more. Roll out to about the size of a large pencil and form into a figure 8.
Bake in a 425° oven. Place on lower rack until puffy, then place on upper rack to brown. Bake 10-12 minutes.
