Quiche Lorraine

Ingredients
  • 1/2 lb. diced bacon
  • pie dough for 9" pie plate
  • 1 large onion, sliced
  • 2 T. butter
  • 1 1/2 c. grated cheese
  • 1 T. flour
  • 3 eggs
  • 1 1/2 c. milk
  • 1/2 t. salt
  • generous dash nutmeg

Instructions

  • Preheat oven to 450°
  • Slice bacon into 1/2 inch strips and cook until crisp (I put bacon on a parchment lined baking pan and bake at 400° for 10-15 minutes)
  • Make pie dough and bake in 9" pie plate for 5 minutes
  • Slice onions and cook in butter until tender
  • Mix shredded cheese with flour
  • Beat eggs and add milk, salt, and nutmeg
  • Spread cheese, then bacon, then onion into pie shell
  • Pour egg mixture into baked pie shell
  • Bake 15 minutes at 450°
  • Reduce heat to 350° and bake 10 to 15 minutes until custard sets and knife inserted to middle comes out clean
  • Cool 10 minutes before serving
