Roasted Vegetables

Ingredients
red/yellow peppers
mushrooms
sweet potatoes
carrots
asparagus
broccoli
andouille sausage
red onions
garlic cloves, whole
avocado oil
red basalmic vinegar
za'atar spice (generally includes thyme, sumac, sesame seeds, etc. Cindy says these are an Arabic mix)

Homemade za'atar
  • 2 tablespoons minced thyme
  • 2 tablespoons toasted sesame seeds
  • 2 teaspoons ground sumac
  • 1/2 teaspoon coarse salt

Directions
Put onions, potatoes, carrots, and sausages in earlier since they take longer to cook.
Coat with spices - avocado oil, red basalmic vinegar, za'atar spice.
Bake 450°.
