Seed Crackers

Ingredients
  • 1½ cups sunflower seeds
  • ½ cup pumpkin seeds
  • 1 cup sesame seeds
  • ⅓ cup flax seeds
  • ¾ teaspoon salt
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 tablespoon psyllium husk flakes
  • 2¼ cups water

Instructions
  • Set oven to 300°F
  • Line two large cookie sheets with parchment paper
  • Mix all ingredients in large bowl; let sit 20 minutes to absorb water; mixture will become gooey
  • Stir mixture thoroughly before spreading thinly and evenly onto parchment lined cookie sheets
  • After baking about 35 minutes, pre-score lines while the crackers are still soft; try a pastry scraper or a pizza cutter
  • Bake until crackers are crisp, lightly golden, and no longer soft/gooey; this can vary by the thickness of the cracker but will be at least an hour or longer
  • Use care not to over-bake to avoid bitterness
  • Let crackers cool, then remove from parchment paper and gently break along pre-scored lines
Tips
  • For even baking, switch which rack each of the cookie sheets are placed on each time you check on them
  • If you find they are not quite crisp after cooling; put them back in the oven for a few minutes
  • Store in air-tight container
